I have been baking bread for a few decades. My favorite flour is King Arthur bread flour, which is not enriched. When I bake I want pure flour, like King Arthur. I also use European flours when I can't get King Arthur. European wheat flour is not enriched either.
I had a college roommate who had spina bifida. It is a terrible disease. But it is easily addressed with education and vitamin supplements (which many pregnant women take).
I support vaccination and being informed about real science. That doesn't mean that I want my bread flour enriched.
